The invention discloses a preparation method for selenized
carrageenan water-in-
oil emulsion, and a product and application of the selenized
carrageenan water-in-
oil emulsion. The preparation method is characterized by comprising the following steps of: (1) dissolving selenized
carrageenan into water to form a water phase; (2) heating
corn oil and Span 80 on a water bath at temperature of 45 DEG C to form a uniform transparent light yellow solution, adding Tween 80 and uniformly mixing the Tween 80 and the uniform transparent light yellow solution to form an
oil phase; (3) keeping the water bath, dropwise adding the selenized carrageenan solution into the
oil phase and stirring the mixture into a transparent solution; and (4) detecting a finished product. The selenized carrageenan water-in-
oil emulsion prepared by using the method is yellow liquid from the appearance; and after being heated and stirred, the selenized carrageenan water-in-oil
emulsion cannot be layered at low temperature, so a user can observe uniform single phases by eyes and a
Tyndall effect exists. The selenized carrageenan water-in-oil
emulsion can be used as an additive for an oil food or is independently packaged into a
capsule which is used as a functional
healthy food and marketed. The selenized carrageenan water-in-oil
emulsion has the advantages that: the particle size is suitable for living beings, the stability and the compatibility are high, the manufacturing process is simple and the practicability is extremely high.
