The process comprises: adding sorbic acid and non-ionized water to a reaction kettle, starting stirring, heating to a temperature of 40-60 DEG C, atomizing 40-50% potassium hydroxide at the top portion of the reactor, carrying outa neutralizing on the atomized potassium hydroxide and the sorbic acid, controlling the PH value at 10.0-12.0, adding active carbon, carrying out stirring decolorization for 30 min at a temperature of40-60 DEG C, re-measuring the PH value, micro-adjusting the PH value if the PH value is not 10.0-12.0, filtering the neutralizing liquid, and carrying out spray drying to obtain the finished productpotassium sorbate. According to the present invention, in the process, the potassium hydroxide is atomized to achieve the nanometer scale, and the nano-scale potassium hydroxide and the sorbic acid are subjected to a neutralizing reaction, such that the sorbic acid and the potassium hydroxide contact uniformly, the neutralizing process is mild, and the condition that the influence of the sorbic acid oxidation caused by the local reaction superheating on the quality of the potassium sorbate can be avoided.
