Disclosed is a method for simultaneously preparing high
maltose syrup and
protein using potatoes. The method comprises the following steps that 1, raw materials are selected and pretreated; 2, dicing, pulping and smashing are conducted, and
slurry and
slag are separated; 3, after being standardized, the
slurry is subjected to injection
liquefaction and
thermal insulation reaction; 4,
clear liquid filtered by a plate frame is used for preparing raw materials of the high
maltose syrup, and refining is conducted on
filtration cakes filtered by the plate frame to obtain the potato
protein, wherein physicochemical test results of the potato
protein prepared and obtained in the step 4 are that the
protein content is greater than 70%, the
fat content is less than 5%, and the ash content is less than 5%; the technical indexes of the high
maltose syrup are that the concentration is 70%-75%, the maltose content (for
dry matter) is 70%-80%, and the DE value is 45%-55%. According to the method for simultaneously preparing the high
maltose syrup and the protein using the potatoes, the characteristics of components of the potatoes are analyzed, a comprehensive utilization method is adopted, so that the high
maltose syrup is obtained, the potato protein can be recovered and obtained synchronously, the
protein activity in the process is maintained to maximum limit, and the maximum utilization of resources is promoted.
