The invention relates to a production method of crystallized water threose. The production method comprises the following steps: after cleaning and slicing the raw materials, putting the raw materials into an extraction bath or an extraction tank and extracting with clean water so as to obtain an extraction liquid; after boiling the extraction liquid, cooling to below 40 DEG C, saturating by CO2 gas, and after the extracting liquid is turbid, neutralizing by lime; filtering, decoloring particles by a carbon column and decoloring, deashing and desalting by using ion exchange resin; then, filtering by use of a polysulfone hollow fiber membrane and vacuumizing and evaporating to obtain syrup with the solid content which is greater than or equal to 70%; and purifying water threose by using a dynamic crystallization process or a static crystallization process so as to obtain water threose with the purity over 95%. The production method is simple and easy to operate and high in crystallization efficiency, and the extraction ratio can reach over 70%.
