The chitosan-coated vitamin C micro-capsule prepared by adopting a multiphase emulsion method is of a regular spherical multi-core structure, and the coverage rate of vitamin C can be 20-50%. The prepared vitamin C micro-capsule effectively prevents the vitamin C from being oxidized, and has good biocompatibility and degradability.
