Lactobacillus fabifermentans is a member of the genus Lactobacillus, the most diverse genus among lactic acid bacteria (LAB), a group of Gram-positive bacteria that produce lactic acid as their major fermented end product and that are often involved in food fermentation. L. fabifermentans was proposed in 2009 as a new species, after the type strain LMG 24284T (DSM 21115T) has been isolated from Ghanaian cocoa fermentation. The invention provides a method for producing fermented soybean meal by two-step inoculation segmented solid-state fermentation. The lyophilized preparation prepared by the method of the invention has the viable bacteria count not less than 109cfu/g, and the viable bacteria survival rate is higher than 75 percent after the lyophilized preparation is stored for 90 days. The invention also provides an optimized culture medium for lactobacillus reuteri, and the viable bacteria count is six times higher than that that of the viable bacteria cultured on the conventional culture medium (Magnetic Resonance Spectrum (MRS) culture medium).

The present invention relates to a microorganism belonging to the group of lactic acid bacteria characterized in that it is capable of specifically binding to Streptococcus mutans, wherein the specific binding is (i) resistant to heat treatment; and/or (ii) resistant to protease treatment; and/or (iii) calcium-dependent; and/or (iv) formed within a pH range between 4.5 and 8.5; and/or (v) formed in the presence of saliva.
