The invention discloses a method for detecting the freshness of the chicken by an electrochemical method. The method comprises the following steps: (1), washing chicken samples with different freshness values in deionized water, sucking the
moisture, smashing the chicken samples, weighing the samples, adding a
solvent, carrying out ultrasonic extraction, and carrying out filtering to obtain filterliquor; (2), dripping and
coating the filter liquor on the surface of a
glassy carbon electrode, carrying out
drying, immersing the
electrode into a
buffer solution, forming a three-
electrode systemby the immersed electrode, a
platinum electrode and a silver /
silver chloride electrode, and carrying out
electrochemical response spectrum acquisition on the filter liquor by using a linear
voltammetry scanning method; (3), carrying out
electrochemical response spectrum acquisition on chicken samples with unknown freshness values according to the process in the step (2); and (4), carrying out dataprocessing on collected
electrochemical response spectra, extracting feature values, comparing differences of feature values of the samples with the unknown freshness values with samples with the known freshness values, and determining freshness values of the chicken samples. The detecting method has advantages of simple operation, sensitive reaction, low instrument cost, high speed and high accuracy and the like.
