Food warming apparatus and method

An oven for transferring heat to food in trays and a method for using the oven. The oven includes a cabinet with partitions dividing the interior into a plurality of separate, thermally isolated holding compartments each adapted for removably receiving a tray of food. Heat sources above the tray emit radiant heat to warm the food in the trays. A control mechanism controls the duration of the total hold time for the food having a duration of heated holding time during which a respective heat source is activated. The oven also includes a forced air mechanism under the control of the control mechanism for delivering forced air into the compartments. The heat sources are activated and deactivated during successive duty cycles to thereby to maintain the food in a respective compartment at a selected holding temperature for a duration of heated holding time.

Cooking apparatus and method with product recognition

Cooking apparatus having first and second platens with product recognition. A positioning mechanism moves the second platen toward the first. A detector senses the second platen making contact with a food product disposed on the first platen and provides a signal. A controller uses the signal to measure the travel distance of the second platen. The product thickness is a function of the travel distance, which is used to select a cooking procedure for the food product. The controller then executes the selected cooking procedure to cook the food product. The detector can include a micro switch, proximity sensor, touch sensor, strain sensor, thermal sensor, optical sensor, sonar sensor or positioning load change sensor.

Foodspread applicator

A foodspread applicator that stores, measures, and applies foodspreads of the present invention preferably includes a main body having a front end and a rear end, a body tip attached to the front end of the main body, and a rear body attached to the rear end of the main body. The main body is suitable for receiving a foodspread therein. At least one outlet is preferably defined in the body tip through which the foodspread may be extruded. The rear body has a rear body longitudinal axis that is substantially parallel to a main body longitudinal axis of the main body. A plunger is movably located within the main body and the rear body for forcing the foodspread from the main body through the at least one outlet. A lever is longitudinally, pivotably attached to the rear body, the lever having a range of motion defined by the front end and the rear end of the rear body. The lever has a resting position within the range of motion at an angle less than 45 degrees from the rear body longitudinal axis. A power transmission mechanism mechanically communicates manual input from the lever to the plunger.
