Abstract

The invention discloses a good microencapsulation method for carotenoid. The method comprises the following steps of: 1) fully dissolving protective colloid, sucrose or glucose, vitamin C palmitate, ethylene diamine tetraacetic acid (EDTA) and tea saponin in water, and adjusting the pH to be 10 to 11 to obtain a water phase A; 2) fully dissolving the carotenoid and an antioxidants in a solvent to obtain an oil phase B; 3) under high-shear and high-agitation conditions, adding the oil phase B into the water phase A, emulsifying to form colostrum by stirring at a high speed, heating and removing the solvent to obtain a microemulsion; and 4) adding the obtained microemulsion into a spray drying system to obtain carotenoid particles or powder after spray drying. The carotenoid particles or powder prepared by the method has the characteristics of high dispersibility, high stability, high light permeability and small particle size, and meanwhile has the characteristics that the embedding rate is high and the washout content is less than 1 percent.
