The particle consists of lutein and water-soluble high polymer accessories. The preparation technology comprises the following steps: adding mixed powder of the lutein and the water-soluble high polymer accessories to a sample cabin of the CO2 supercritical fluid recrystallizing equipment; turning on the CO2 supercritical fluid recrystallizing equipment so as to introduce CO2 into the sample cabin, preserving temperature at 35-85 DEG C and pressure under 100-300bar to keep CO2 under a supercritical fluid status, closing the valve of the sample cabin, dissolving the mixed powder of the lutein and the water-soluble high polymer accessories, preserving for 5min and rapidly opening the valve of the sample cabin, so that a solution in the sample cabin is sprayed into a collecting cabin which is in an environment of room temperature and barometric pressure, therefore the water-soluble lutein particle is prepared. The water-soluble lutein particle is added to a water-soluble solvent, so that the bioactivity of the lutein is developed. The method disclosed by the invention is simple and easy to control.
