Abstract

The present invention discloses a calcium stearoyl lactylate preparation method. The method comprises the following steps of adding lactic acid into water, evenly stirring the lactic acid and the water, adding calcium carbonate, stirring the mixture for 1-1.5 h at the temperature of 55-65 DEG C, adding stearic acid and polyethylene glycol-400, carrying out reaction for 2-3 h at the temperature of 160-180 DEG C and with a vacuum degree of 0.07-0.09 MPa, discharging the product after the reaction ends, recrystallizing the product by using absolute ethyl alcohol, and carrying out vacuum drying, thereby obtaining calcium stearoyl lactylate. The preparation method is high in yield; the reaction condition is mild; the production cycle is short; the energy consumption is low; and the production cost is low. Meanwhile, the invention further provides an emulsified composition. The emulsified composition comprises the calcium stearoyl lactylate prepared by the method, propylene glycol monostearate and polyoxyethylene sorbitan monostearate. The emulsified composition may be applied to milk beverage, and can improve the stability of the milk beverage.
