Abstract

The invention discloses a method for identifying the authenticity of low-erucic-acid rapeseed oil and relates to a method for identifying the authenticity of oil. The method comprises the following steps of: measuring a liquid oil sample to be detected; dissolving the liquid oil sample to be detected by using a deuterated solvent and then transferring the mixture into a nuclear magnetic resonance (NMR) tube, and acquiring hydrogen spectrum data and carbon spectrum data of the sample through a high-field NMR spectrometer; and performing data analysis, judging the erucic acid content by calculating fingerprint peak information of a carbon spectrum, and judging that the erucic acid content is high according to fingerprint peak information of a hydrogen spectrum. Based on the NMR fingerprint spectrum technology, the fatty acid content in the rapeseed oil is measured through NMR, and the distribution condition of the measured fatty acid content can be analyzed. An NMR spectrum also can reflect the molecular structure characteristics, so that all fatty acid compositions in the experimental sample can be identified accurately, and every fatty acid composition can be identified quickly and non-destructively. By the method, the oil quality can be quickly identified according to NMR data, the compositions of the sample are not destroyed, sample pretreatment is not required, and a complex sample preparation process is avoided.
