The method comprises the steps: dissolving panax notoginseng saponins with water, putting the dissolved panax notoginseng saponins into a hydration reaction kettle, controlling the temperature to be 120 DEG C, and carrying out a reaction for 27 h; and cooling the reaction solution,separating by column chromatography, concentrating and drying to obtain the required notoginsenoside processed product. The obtained processed product comprises eight monomer components, namely 20(S)-Rh1, 20(R)-Rh1, Rk3, Rh4, 20(S)-Rg3, 20(R)-Rg3, Rk1 and Rg5.
