According to the method, after shrimp and crab shells are subjected to calcium extraction with an organicacid, and treatment is performed with a steam explosion method without the adding of inorganic acids and alkalis, such that the dense structure is destroyed so as to improve the possibility of the subsequent reaction; and the material being subjected to the steam explosion treatment is subjected to solid-state fermentation with proteinase or proteinase-producing microorganisms to further hydrolyzeproteins, such that the shrimp and crab shells are completely separated to obtain organic acids, calcium, proteins and chitin.
