The nitrite scavenger made from geum aleppicum jacq. has high nitrite ion removing capability, and can be further used for preparation of food, health food or medicines for reducing the cancer morbidity and treating nitrite poisoning of people smoking for a long term (smoking can promote excretion of the carcinogenic substance: tobacco-specific N-nitrite to a bile duct) or people highly taking other types of nitrite. The nitrite scavenger can remove nitrite ions as high as vitamin C.
