Its process includes: naturally drying and crushing the mature onion leaves, and performing supercritical carbon dioxide extraction, wherein, the extraction temperature is adjusted to 35-45 DEG C, the extraction pressure is 20-30MPa, the time is 30-60min, so as to get the onion oil with a yield ratio of 3.30-3.42 per mill. The present invention provides a method of extracting onion oil by taking the onion leaves as new resources, which has advantages of strong operability, security, less destruction of active ingredients, higher yield and good reproducibility.
