Abstract

The invention provides a method for extracting bonding polyphenol in carrot dietary fibers. The method comprises the following steps: (1) uniformly mixing 100-mesh sieved carrot powder with deionizedwater in a proportion of 1 to 8.5, sequentially adding high-temperature-resistant alpha-amylase, papain and saccharifying enzyme, respectively carrying out 30 minutes, so as to obtain the carrot dietary fibers; (2) adding the carrot dietary fibers into a brown spiral pipe filled with nitrogen, processing the carrot dietary fibers by virtue of a 2mol / l sodium hydroxide solution for 4 hours, adjusting the pH value of the solution to 1.5-2, carrying out extraction by virtue of an ethanol solution, filtering to obtain an alcohol extracting solution, carrying out vacuum concentration on the alcoholextracting solution, and carrying out freeze drying, so as to obtain bonding polyphenol.
