Abstract

The invention relates to a method for extracting gelatin from rabbit skin, which comprises the following steps: rabbit skin pretreatment: removing subcutaneous fat, unhairing, cleaning and cutting; acidizing: immersing the rabbit skin in 1 wt% hydrochloric acid for 10 minutes; and carrying out gelatin extraction and centrifugal drying. The method can produce high-quality rabbit skin gelatin by combination of short-time dilute acid treatment and hot extraction, and has the advantages of short production cycle, low acid consumption and lower environmental pollution as compared with the traditional gelatin technique. Compared with the characteristics of the aquatic product gelatin, the gelatin produced by the method has the advantages of favorable gel characteristic, high quality and wide application range.
