Problems solved by technology

However, the effect of the existing ultraviolet treatment technology on degrading PAT is not very satisfactory. In addition, in the production process of apple juice, the degree of browning of juice is a major factor that reduces the quality of apple juice, and ultraviolet treatment cannot effectively curb this disadvantage. [0060] 1. Preparation of experimental raw materials and fruit juice

[0061] Red Fuji apples (produced in Baishui County, Shaanxi, China) were purchased from Jingdong Supermarket. They were uniform in size, ruddy in color, complete, free of pests and diseases, and free of mechanical damage; they were immediately shipped back to the laboratory.

[0062] Take a good apple, clean it, remove the core, cut into pieces, blanching part of it to protect the color, and part of it after squeezing the juice, add L-ascorbic acid in proportion (0.5g / kg) to protect the color (within the range allowed by the national standard), Freeze at -20°C for further processing.

Abstract

A method for degrading patulin in fruit juice is provided. The method includes (1) adding fruit juice into a reactor; (2) adding nanometer TiO2 powder into the reactor to obtain a mixed suspension, with the TiO2 concentration being controlled to be 0.9-1.5 g / kg; (3) controlling the temperature of the mixed suspension to 20-30 DEG C, and directly radiating the suspension with ultraviolet light for40-120 min under stirring; and (4) subjecting the mixed suspension after photocatalytic degradation to filtration with a filter to remove TiO2. The TiO2 which is a nontoxic harmless trace component isintroduced, and physical properties thereof excited by ultraviolet and an ultraviolet processing technique are utilized in combination, thus greatly improving advantages of ultraviolet processing, benefiting sense perception of the fruit juice and greatly improving product quality.

Description

technical field [0001] The invention relates to the technical field of liquid food detoxification treatment, in particular to a method for photocatalytically degrading patulin in fruit juice. Background technique [0002] Patulin (PAT), also known as patulin, is a toxic fungal metabolite. According to the research, the fungi that can produce patulin include Penicillium expanses, Penicillium patulin, Penicillium clavum, Penicillium soil, Penicillium new Zealand, Penicillium lithoid, Penicillium granulosa, Penicillium merlin, Penicillium arcus, There are 16 species belonging to 3 genera including Penicillium chrysogenum, Penicillium betelifera, Aspergillus clavatus, Aspergillus gigantum, Aspergillus terreus and Epidermis indica. Patulin mainly contaminates fruits and their products, especially apples, hawthorns, pears, tomatoes, apple juice and hawthorn slices. Toxicological tests have shown that patulin has toxic effects such as affecting fertility, carcinogenesis and immun...
