Abstract

The invention discloses a preparation method of cold water dispersible liquid lutein ester. The preparation method comprises the following process steps: (1) sufficiently and uniformly mixing oil-soluble lutein ester, liquid oil and an antioxidant to obtain a mixture A; (2) sufficiently and uniformly mixing two different emulsifiers to obtain a mixture B; (3) stirring the mixture A, heating the mixture A to 60-80 DEG C, adding the mixture B, stirring and preserving the heat for 1h; and (4) adding a water-based diluent heated to 60-80 DEG C into a mixed system of the mixture A and the mixture B, homogenizing after uniformly stirring at the temperature of 50-70 DEG C, and naturally cooling to be lower than 30 DEG C to obtain stable cold water dispersible liquid lutein ester. Compared with the prior art, the method disclosed by the invention is relatively small in emulsifier dosage; the obtained liquid lutein ester has no foreign smells or wall built-up, sedimentation and layering phenomena; and the preparation method has strong practical operability in industrial production.

Description

technical field [0001] The invention relates to a processing method of a food additive, in particular to a method for changing lutein ester from an oil-soluble solid to a cold-water dispersible liquid. The invention belongs to the field of food additive processing. Background technique [0002] Lutein ester is a natural food coloring agent and nutritional supplement. It is a general term for a carotenoid fatty acid ester. It is an oil-soluble powder. It is mostly extracted from "marigold" and refined. Brilliant golden yellow. Current research shows that lutein esters have extensive and effective physiological functions. 1. Protect the eyes from the damage of ultraviolet rays in the light, delay the aging of the eyes and prevent pathological changes, especially effectively prevent age-related macular degeneration. 2. Enhance the immune function of the body, and its regulatory effect on cellular immunity is mainly manifested in the relationship with cell apoptosis and gene...
