Abstract

The invention provides edible oil produced from akebia trifoliata seeds and a production method thereof. The edible oil, which has a light yellow oil color, is transparent and has a rich aroma, is prepared from seeds of fresh akebia trifoliata and through the steps of frying the seeds, crushing, steaming blanks, conditioning, covering cakes and squeezing. The edible oil contains 12 fatty acids, wherein six saturated fatty acids account for 22.04wt% and comprise 19.13wt% of palmitic acid, 2.23wt% of 16-methyl-heptadecanoic acid, 0.25wt% of myristic acid, 0.21wt% of capric acid, 0.15wt% of 15-methyl-palmitic acid and 0.07wt% of stearic acid; six unsaturated fatty acids account for 77.96wt% and comprise 47.41wt% of 11-oleic acid, 27.05wt% of linoleic acid, 1.15wt% of 8-oleic acid, 0.25wt% of 11-eicosenoic acid, 0.35wt% of 13-decosahedaenoic acid and 1.75wt% of linolenic acid. The akebia trifoliata fruit oil disclosed by the invention has a bright oil color, a rich aroma and abundant nutrition and has a health-care function; the oil yield is high and reaches 50-55 kg of oil per 100kg of fried seeds.
