Embodiment 1

[0148] Under introduction of nitrogen, 90 g of polyglycerol having an average OH value of 1190 mg KOH / g was reacted with 210 g of stearic acid at 240°C. Water of reaction was distilled off. When the acid value is less than 2 mg KOH / g, cool the polyglycerol ester to 130° C., add 40 g of citric acid, and reduce the pressure to 50 mbar. The water generated in the reaction was separated and removed again. When the acid number is <50, the vacuum is broken with nitrogen and the product is extracted.

When the acid value is less than 2 mg KOH / g, cool the polyglycerol ester to 130° C., add 8 g of citric acid, and reduce the pressure to 50 mbar. The water formed during the reaction was again separated off. When the acid value was <1, the vacuum was broken with nitrogen and the product was withdrawn.
