Abstract

The method allows the walnut peptides with high hydrolysis degree and high activity to be obtained under the co-action of above two enzymes. The influences of the peptides on improvement of the memory of experimental animals are evaluated by using spatial exploration test, navigation test, step-through test and step-down test in a mouse Morris water maze as indicators. Results show that the small peptide (<3 kDa)with a short peptide chain can improve the spatial cognition and learning ability of dysmnesia mice, is a food-borne peptide, has a high safety, and can be taken for a long term.
