Problems solved by technology

Corn protein matrix is a large and complex protein molecule composed of different protein subunits in gluten through disulfide bonds, and starch is embedded in it. It is precisely because of this combination of protein and starch that it is difficult to separate corn starch from protein completely. , thereby affecting the extraction rate and purity of starch and protein

Abstract

The invention discloses a method for extracting cornstarch assisted by ultrasonic waves. The method utilizes ultrasonic treatment to extract cornstarch, which helps to release the bondage of protein matrix to starch granules. Compared with the traditional wet processing method, the soaking time of corn and the addition of sulfur dioxide are reduced under the premise of ensuring the purity of starch, and the production efficiency of corn starch is greatly improved. Tests have shown that compared with the traditional wet processing method, corn starch assisted by ultrasonic extraction shortens the corn soaking time by 33.33%, reduces the amount of sulfur dioxide added by 75%, and increases the starch yield by 10.37%. In the present invention, more starch is released from the protein matrix during the treatment process, so the yield of cornstarch extracted through ultrasonic-assisted treatment is greatly increased. The method for extracting corn starch assisted by ultrasonic wave of the present invention has simple equipment, convenient processing, low production cost and is beneficial to industrialized production.

Description

technical field [0001] The invention relates to a method for ultrasonically assisted extraction of cornstarch, which belongs to the technical field of grain processing. Background technique [0002] Mature corn kernels are mainly composed of four parts: root cap 0.8%, pericarp 5.3%, germ 11.9%, endosperm 82%. Endosperm, including the aleurone layer and starch cells, is the largest component of corn kernels, mainly composed of starch granules embedded in a protein matrix and fine protein granules. Corn endosperm is divided into floury endosperm and horny endosperm, and the average ratio of floury endosperm to horny endosperm is about 1:2, which is related to the protein content in corn kernels. The protein matrix in the powdery endosperm is thinner, and the starch granules are large and round. During processing, the starch recovery is easier. The protein matrix in the horny endosperm is thicker and forms a dense glass-like structure. The starch granules are squeezed into hor...
