Abstract

The invention relates to a high-calcium milk and a preparation method thereof, belonging to the field of processing technology for modified milk. Each 100 g of high-calcium milk contains no less than 150 mg of calcium and no less than 2.5 mu g of vitamin D. Each 1000 kg of prepared high-calcium milk comprises 0.5 to 2 kg of sucrose fatty acid ester, 0.5 to 2 kg of a stabilizing agent, 10 to 15 g of vitamin D powder, 1 to 3 kg of milk mineral salt and 30 to 40 kg of aspartame, wherein the stabilizing agent is a mixture of microcrystalline cellulose and carrageenan in a mass ratio of 3: 2. According to the invention, damage of nutrients caused by excess heat treatment is reduced due to utilization of extraction and processing fusion technology and a pasteurizing process, nutrients and active components inherent in main and accessory materials are comprehensively retained, supplement of vitamin D better promotes absorption of calcium by a human body, and the high-calcium milk effectively compensates for daily calcium loss of a human body while providing reasonable nutrients.
