The freeze-dried milk piece is prepared by the following steps: heating raw milk, adding xylitol, whey protein powder and bean flour, performing homogenizing, sterilizing and cooling, adding zymophyte powder for fermentation, adding pulp, nut powder and compound bacteria powder, and performing pre-freezing and vacuum freeze-drying. According to the preparation method, by virtue of reasonable raw material components and proportion combined with a fermentation freeze-drying process, the prepared freeze-dried milk piece is balanced in nutrition proportion and easy to absorb, and has a good effect of preventing decayed teeth especially due to the synergistic effect of lactobacillus plantarum N3117 and lactobacillus paracasei in the nut powder and the compound bacteria powder.
