Abstract

The invention provides a process for increasing liquiritigenin content, which takes liquorice as a raw material and is fermented by saccharomycetes. The process comprises the following steps: taking liquorice medicinal materials, sterilizing, adding cellulase, water and saccharomycetes, and fermenting. Experimental results show that the liquiritigenin content in the licorice root fermented productobtained by the fermentation process is remarkably increased, and the liquiritigenin content is increased by more than 30 times after liquorice medicinal materials with the same mass are fermented bythe specific process disclosed by the invention. The fermentation process disclosed by the invention is low in cost, simple to operate and easy for large-scale production, and has a wide applicationprospect in preparation of liquorice products with high liquiritigenin content.
