Abstract

The invention discloses a method for preparing chitin by hydrolyzing shrimp and crab shells by utilizing alkaline protease. The method comprises the steps: adding water into the shrimp and crab shells, and carrying out heating to cook the shrimp and crab shells; reducing the temperature to the normal temperature, then, transferring the shrimp and crab shells into a fermentation vessel, adding the alkaline protease into the fermentation vessel to carry out fermentation for 12-16 days to obtain a fermented mixture, wherein the mass of the alkaline protease is 0.3-0.4% of that of the cooked shrimp and crab shells; and carrying out solid-liquid separation on the fermented mixture to respectively obtain a fermentation liquid and a sediment. Complex enzyme method decomposition is adopted during shrimps and crabs are dissolved and decomposed in the method, so that the damage of an acidolysis decomposition method in a traditional process to the biological potency of proteins is avoided; and three high-purity products including chitin, protein powder and fat can be sequentially separated and extracted by one fermentation, so that the defect that only single product can be extracted in the traditional process is overcome, the comprehensive utilization ratio of raw materials is greatly increased, and the environment is not polluted in a production process.
