Embodiment 1)

[0029] The method for simultaneously detecting acrylamide and heterocyclic amines in food of the present embodiment has the following steps:

[0030] ① Sample pretreatment.

[0031] A 66mL sample extraction cell was used, with acetonitrile as the extraction solvent, 10g of alumina was added to the extraction cell before extraction, and then 5g of acrylamide (AA) and heterocyclic amines (IQ, MeIQx , PhIP) samples to be tested by accelerated solvent extraction. Extraction conditions: extraction temperature 80°C; system pressure 10.3MPa (1500psi); heating time 5min; static extraction time 5min; cleaning volume 50% of the volume of the extraction pool; purging time 160s; cycle times 2 times.

[0032] The extract containing acrylamide (AA) and heterocyclic amines (IQ, MeIQx, PhIP) (hereinafter referred to as extract) was obtained.

[0033] ②Ultra-high performance liquid chromatography.

[0034] First filter the extract obtained in the above step ① with anhydrous sodium sulfate, ...

Abstract

The invention discloses a method for simultaneously detecting acrylamide and heterocyclic amine in food. The method comprises the following steps of: carrying out pre-treatment on a sample by adopting an accelerated solvent extraction technology; and carrying out qualitative and quantitative detection by adopting the combination of an ultra-high performance liquid chromatography and an ion trap-flight time tandem mass spectrum. According to the method disclosed by the invention, the acrylamide and the heterocyclic amine in the food can be simultaneously detected and the detection effect can be improved by optimizing conditions of an extraction temperature for extracting an accelerated solvent, an extracting solvent and the like, and optimizing the conditions of the ultra-high performance liquid chromatography and the ion trap-flight time tandem mass spectrum; and a detected result is accurate.

Description

technical field [0001] The invention belongs to the technical field of food safety, in particular to a method for simultaneously detecting acrylamide and heterocyclic amines in food. Background technique [0002] Acrylamide (AA for short) is an unsaturated amide, colorless and transparent crystal, stable at room temperature, flammable, highly toxic, harmful to the central nervous system, and may cause cancer. In April 2002, researchers from the Swedish National Food Administration and Stockholm University first reported that acrylamide was detected in some fried and grilled starchy foods, such as French fries and potato chips, and the content exceeded the maximum allowed in drinking water. More than 500 times the limit. Afterwards, countries such as Norway, the United Kingdom, Switzerland and the United States also reported similar results. [0003] Chinese patent document CN101303304A discloses a method for detecting acrylamide in food, including: sample pretreatment: put...
