The method comprises the following steps of: firstly, respectively placing a work electrode expanded graphite paste electrode, a reference electrode saturated calomel electrode and an auxiliary electrode platinum wire electrode in Boehret-Robinson BR buffer solutions ( for short BR buffer solution) with different amaranth concentrations; adopting a square wave volt-ampere technology to operate so as to obtain an oxidizing peak current value of the amaranth, wherein the oxidizing peak current value and the concentration of the amaranth have a good linear relationship; and measuring an oxidizing peak current value of a sample solution by using the same method, so as to obtain the concentration of the amaranth in the sample according to a standard curve and a corresponding equation of linear regression.
