Abstract

The invention belongs to the field of food detection and constructs a novel negative second derivative Fourier transform infrared spectroscopy based method for rapid determination of trans-fatty acid in food. Main technical characteristics are as below: a sample is pretreated; a Fourier infrared spectrometer is employed to collect infrared absorption spectrum in a wave band scope of 1050-900 cm<-1>; mathematic operation is conducted to obtain a negative second derivative infrared absorption spectrum; a standard curve is established by glyceryl trioleate and trielaidin mixed standard; and sample spectrum data is calculated through calibration to directly obtain the content of trans-fatty acid. Compared with a gas chromatography method, the method has advantages of simple operation and fast determination; and compared with an existing infrared spectrometry, the method has low detection limit and can determine trans-fatty acid with low content (1-5%, mass fraction) in food.
