Abstract

The invention discloses a processing method for improving rehydration characteristics and restoration quality of dried shiitake mushrooms. The method comprises the following steps: uniformly flattening shiitake mushrooms, heat preservation and pressure maintaining for 10-20 minutes at a temperature of 90-100 DEG C and a pressure of 0.3-0.8 MPa, and carrying out differential pressure treatment for1-3 times with the interval of 3-8 minutes so as to obtain primarily treated shiitake mushrooms; and then carrying out low-temperature convection drying to dry the shiitake mushrooms until the moisture content is below 13%. According to the method, water in the shiitake mushrooms is sharply flashed outwards through differential pressure flash evaporation drying, the pore structure of the shiitakemushrooms is improved, the water transmittance and the drying efficiency are improved, the water is rapidly absorbed through multiple pore channels, and the rehydration rate and the rehydration ratioof the dried shiitake mushrooms are increased; and the convection drying is carried out at low temperature, the damage degree of the internal structure and cells of the material in the drying processis reduced, the operation is simple, the energy consumption is low, the consumed time is short, the rehydrated shiitake mushrooms are full in shape, high in water holding capacity, full in juice during chewing and good in elasticity, and the quality of the shiitake mushrooms can be comparable with that of fresh shiitake mushrooms.
