The method comprises the following steps: taking a soybean protein isolate base material and puffing the soybean protein isolate base material; preparing a dispersion liquid with a weight percentage of 5-20% from the puffed soybean protein isolate base material and water; adjusting the pH value of the dispersion liquid to 6.0-10.0, adding protease, wherein the weight percentage of the protease and the dry base of the puffed soybean protein isolate base material is 0.1-8%, performing enzymolysis for 30-50 min at the temperature of 40-70 DEG C, and then carrying out enzyme deactivation treatment; and filtering through a plate-and-frame filter press or purifying and refining through membrane separation, and carrying out spray drying after double-effect concentration to obtain the soybean peptone.
