Abstract

The invention relates to a method for extracting and purifying polysaccharide from okra and a method for identifying a monosaccharide ingredient. The method comprises the following steps: a) taking fresh tender okra fruits, and making the pulverized okra top into a homogenate or a colloid grinder to a homogenized state; (2) filtering the okra homogenate by employing a filtering method, and respectively collecting a filter cake and a filtrate; c) adding 0.1-2.0% of protease according to weight of okra in the filtrate, adding 0.05-1% of calcium chloride according to weight of raw materials, adjusting the pH value to 8-9, and stirring the materials for 6-10 h at the temperature of 30-50 DEG C, d) adjusting the pH value of enzymatic hydrolysis liquid to 3.0-5.5 and adding a sulfuric acid salting solution, uniformly stirring the materials, performing standing and processing the filtrate by using a centrifugal process, and collecting the filtrate; and e) performing ultrafiltration treatmenton the obtained filtrate, collecting trapped fluid, and performing spray drying to obtain the okra polysaccharide powder. The method has the characteristics of simple process of polysaccharide extraction and monosaccharide identification, and can increase the okra polysaccharide recovery rate.
