The preparation method comprises the following steps of pretreating phyllostachys praecox shoots; performing acid treatment, alkali treatment, and decoloration treatment so as to obtain coarse dietary fiber power; performing dynamic high-pressure micro-jet homogenizing so as to obtain nano-cellulose; and preparing the dietary fiber chewable tablets having an anti-oxidation function, by using phyllostachys praecox shoot nano-dietary cellulose as a raw material and using dextrin, milk powder, citric acid, bamboo leaf flavonoids, saccharose and the like as auxiliary materials. Results indicate that the optimal condition of preparing phyllostachys praecox shoot residue nano-cellulose by a chemical method combining with dynamic high-pressure micro-jet mechanical treatment is that homogenizing is performed for three times at 40MPa, is performed twice at 80MPa, and is performed once at 100MPa. The content of soluble dietary fibers in the nano-cellulose is increased, and the physical and chemical properties and the biological activity of the nano-cellulose are improved.
