The invention provides a gold nanoparticle synthesis method which comprises the following steps: under a subcritical condition, adding a trisodium citrate solution into a gold ion solution, and reacting for a first preset time duration until the color of the solution is amaranth; cooling to room temperature, and centrifuging at a first centrifugal rotating speed; a gold nanoparticle precursor is obtained; coupling the solution of the gold nanoparticle precursor with the first preset concentration with the solution of the sulfur-containing amino acid condensate for a second preset time length; and centrifuging at a second centrifugal rotating speed to obtain the gold nanoparticles.
