Abstract

The invention provides a low-temperature and differential-pressure puffed scorpion and a preparation method thereof. The preparation method comprises the steps of placing a raw material scorpion into a puffing pot, heating the puffing pot and increasing the pressure, and then, cooling the puffing pot and reducing the pressure to obtain the puffed scorpion. The puffed scorpion prepared by the invention has the water content of about 3% and is full in whole and crisp in taste. By using the preparation method, some heat-labile substances such as bioactive peptides, enzymes and other substances in a scorpion can be reserved to a relatively great extent, and the healthcare or medicinal values of the puffed scorpion are increased.
