The invention discloses a method for adjusting the hot water temperature of a gas water heater. A water volume adjusting switch is arranged on a terminal water use device; the water volume adjusting switch comprises a gear A, a gear B and a gear C which are respectively corresponding to water flows Q1, Q0 and Q2; Q0 is more than Q1 but less than Q2; the gear B is arranged as an initial gear of the water volume adjusting switch; in a water use process, the gear of a sprinkler is shifted; when the shifting sequence is the gear B-gear A-gear B, an instruction for automatically increasing or reducing a setting temperature for X DEG C is sent by a master controller according to a change signal; when the shifting sequence is the gear B-gear C-gear B, the instruction for automatically increasing or reducing the setting temperature for Y DEG C is sent by the master controller according to the change signal.
