The bay scallop out-of-season breeding method comprises the steps that (1) in the summer of the first year, the breeding water temperature of parent scallops is controlled to fall day by day until gonad development of the parent scallops stops; (2) the breeding water temperature of the parent scallops is controlled to rise day by day until arrest of gonad development of the parent scallops is removed; (3) after the parent scallops spawn naturally, spawns are collected and incubated into scallop larvae; (4) after the scallop larvae grow to young scallops through cultivation, the young scallops are transferred to a natural sea area to be cultured; (5) when the water temperature of the natural sea area falls to below 6 DEG C, the young scallops are transferred to an overwintering area to overwinter; (6) in the spring of the second year, when the water temperature of the natural sea area rises to above 15 DEG C, the young scallops in the overwintering area are transferred back to the natural sea area to be cultured; (7) in the summer of the second year, grown-up scallops are harvested.
