Abstract

The invention discloses a preparation method of a ruptured acidified substance of a sea grape. The method comprises the following steps of (1) cutting the sea grape into slices, soaking by water for 12-24 hours, adding 2-15% of sodium carbonate solution to soak the sea grape, agitating until the solution becomes sea grape paste under the conditions that the temperature is 40-80 DEG C and the pH is 8-8.6; (2) adjusting the pH of the sea grape paste in the step (1) to 2-5 by glacial acetic acid under an agitating state,, agitating for one hour when floccules begin to be separated out and stopping agitating; and (3) filtering, dewatering and baking the floccules in the step (2) to obtain the ruptured acidified substance of the sea grape.
