[0092] With the heating system of the present invention and the ability to control the evaporation of moisture from the tray 103, the hold time (D) of fast food cooked foods such as chicken and French fries is greatly increased and good texture and taste are maintained. In this regard, controlling the water evaporation rate of, for example, chicken meat prevents chicken fibers from drying out and becoming tough and bread crumbs from drying out and becoming oily. And for eg French fries, dry and tough texture with loss of moisture is prevented and the crust is prevented from losing its crispiness.

Abstract

The invention relates to food warming apparatus and method. In general, one embodiment of the invention is directed to food holding apparatus for holding pre-cooked food at a selected holding temperature. The apparatus comprises a cabinet having at least one holding compartment therein, and pre-cooked food in the holding compartment, the food having been previously cooked in a cooking appliance. At least one radiant heat source is spaced above the food a distance less than 12 inches (30.5 cm) for delivering radiant heat to the food. A control mechanism varies the amount of radiant heat delivered by the heat source to the food to maintain the food at the selected holding temperature. A related method is also disclosed.

Description

technical field [0001] The present invention relates generally to a food serving apparatus, and more particularly to an apparatus for maintaining food at a temperature suitable for serving. Background technique [0002] In one embodiment, the present invention is particularly, but not exclusively, directed to food serving devices that use infrared (IR) heaters to maintain pre-cooked food at an appropriate temperature prior to serving. Devices of this type are described using terms such as holding oven, holding device and food warmer, and these terms are used interchangeably hereinafter. Such devices are often used, for example, in the fast food service industry to heat food. However, such devices have certain disadvantages. For example, short hold times (eg, 20 minutes or less) and rapid deterioration of product quality tend to limit the effectiveness of this technique for hold applications. Additionally, different amounts of IR energy are required to keep different food ...
