Abstract

The invention discloses a milk curdling process real-time monitoring method based on incremental principal component analysis. On the basis of near-infrared spectral data in the milk curdling process, the data are gathered in multiple windows through a clustering method, and then dimensionality reduction is carried out on the data in the windows through an incremental principal component analysis method; besides, when subsequent batches of data are added into the windows, the original data can be corrected through newly added sample data, and accordingly feature values and feature vectors in the windows are continuously updated; finally, feature data in dynamic windows precisely reflect the milk curdling process. By means of the method, more reliable data analysis can be carried out on the near-infrared spectral data, and finally the milk curdling process is precisely monitored. Through verification of repeated tests, accuracy is higher than 90% when the method is used for detecting the milk curdling process, and accordingly the method can be used for producing cheese products with higher quality.
