Abstract

The invention discloses a method for identifying olive oil and relates to identification of vegetable oil. The method comprises the following steps of: filling a liquid oil sample to be detected into a nuclear magnetic tube; adding a deuterated solvent into the nuclear magnetic tube to dissolve the sample, and mixing uniformly for later detection; acquiring data of 1H hydrogen spectrum and 13C carbon spectrum of the sample through a high-field nuclear magnetic resonance spectrometer; and performing data analysis through chemical shift information and peak area information of a nuclear magnetic spectrogram, calculating the relative contents of components of each main fatty acid in the sample, and obtaining an identification result through comprehensive judgment according to multiple indexes. The magnetic resonance identification method is easy to operate, accurate in measurement and high in repeatability; through nondestructive detection of the sample, the same sample can be used for repeated measurement or other analysis and test, and the measurement result is not influence by skills and judgment of operators; and the method is suitable for quick authenticity detection of the olive oil.
