Abstract

The field quality control method comprises the following steps: a. sensory evaluation judges evaluate an appointed standard sample and grade the sample in an evaluation table; b. the grading data from the sensory evaluation judges are recorded in a computer, a calculated result is led into an excel file, and a sensory evaluation data counting result is obtained; c. a matlab 5.0 is used for compiling a procedure and a data quality control program, and the general mid-value, general average value, general standard deviation, general coefficient of variation and total point of each evaluation result is worked out; d. when the coefficient of variation is greater than 10% and is less than 15%, a judging panel give a warning and informs indexes with higher coefficients of variation and the judges more greatly affecting the coefficients of variation; when the coefficient of variation is greater than 15%, the judging panel reevaluates the sample; and e. when the coefficient of variation of each evaluation result is less than 15%, the next sample evaluation is carried out.
