Thepreparation method of the nutritious rumex hanus plant protein vermicelli product comprises the following steps: making thickening soup by using the starch raw-material in proportion; mixing the thickening soup with the rumex hanus pulp or the rumex hanus powder so as to obtain combined pulp; carrying out heating so as to have the combined pulp cooked; carrying out molding by performing extruding; and then, carrying out final processing.
