The turning system comprises a sensor calibration system, a turning power system, a parallel sampling system, a phase identification system, a real-time display system, a data filtering system and a data processing system, wherein the sensor calibration system is connected with the turning power system; the turning power system is connected with the parallel sampling system; the parallel sampling system is connected with the phase identification system and the real-time display system respectively; the phase identification system is connected to the data processing system; and the data filtering system is arranged between the data processing system and the real-time display system. According to the turning method, a sensor is used for identifying the phase of a light band and measuring displacement, and an automatic turning mode of any turning angle and any point number is adopted, so that rich measured data is obtained, and a turning process is continuous.
